### Skillet leek and bread frittata **Dinner for 2, about 20 minutes** **You’ll need:** 4 eggs, ½ leek, 3–4 slices stale bread, butter, and some Parmesan-style cheese. **Vegetarian check:** Traditional Parmesan usually contains animal rennet. Use it only if it’s labelled vegetarian; otherwise, leave it out. 1. Slice the leek thinly and rinse well. Tear the bread into bite-sized pieces. 2. Beat the eggs with a splash of water and pepper or salt if you have them. Mix in the bread and let it soak while you cook the leek. 3. Melt a knob of butter in a nonstick frying pan over medium heat. Cook the leek for 4–5 minutes, stirring, until soft. 4. Tip in the egg and bread mixture, spreading it evenly. Sprinkle the cheese over the top, if using. 5. Cover and cook on low heat for 6–8 minutes, until the eggs are set all the way through. Cut into wedges and serve.
