The price is per *etto* (100 g), and the minimum is 1.2 kg, which is 12 etti.

**Things to know:**
- **The minimum is only a minimum.** The steak is cut and weighed, so it often comes in heavier. A 1.5 kg steak would be €82.50 for the meat alone, or about €100 in total. You can ask to see the cut or request one close to 1.2 kg.
- **1.2 kg is plenty for two.** That weight includes the bone.
- **The total covers only the steak.** Sides, drinks and wine are extra. A *contorno* like the beans (€6) goes very well with it.
- **It's traditionally served rare** (*al sangue*). Many Florentine places won't cook it beyond medium-rare.
